I bought my Lange-1 Stealth the dealer had a 110.030 special ordered for me to look at. I loved it but for my first watch (perhaps I should say ?Lange-1? instead) I wanted something more casual.
That is why I choose the Stealth. I agree that it is more expensive then a gold Lange-1, but the heft of the platinum case and the fantastic and mindboggling rhodinated dial are worth every cent I paid. You should see the rhodinated dial with the light of a partly overcast sky. Look at it under different angles and you know what I mean. The dial is like a deep see, you see different shades of grey on it. It is like a chameleon. Witchcraft(sp?) ... try it.
The MOP Guilloche is very nice too and I prefer it over the ?plain? MOP dial of the 110.029 due to the Guilloche (I love guilloched dials and I am not alone, see CR?s post above). The MOP Guilloche dials does magic with the incedent light as well but compared to the Stealth it is very very different. Less Teutonic but (much) more charming ... I dont know how to explain the difference but you know what I mean when you see them next to each other. You should not (and cannot) decide between these two (or any two?) watches from the pictures at the Lange website

With regard to the msrp for the stealth and MOP Guill (see CR?s post too) I remember the MOP Guilloche being slightly more expensive then a ?regular? gold Lange-1. IIRC it was approx 2000 EURO more expensive compared to the Stealth which was approx 7000 EURO more expensive then a gold Lange-1.
I would prefer the Stealth over the MOP Guilloche over the MOP, but please keep in mind that when I was looking for my first Lange, it was to be my first real watch (for different reasons it hurts me to say that, but that is an entirely different story, more on that later perhaps) so I wanted a watch that I could wear day and night, at home and out of home, with jeans and with suit and tie. The rhodinated dial looks very simple to the casual observer which was an added bonus for me as I dont like my watches to look expensive and special for those people. I hope this makes sense.
The dial of the MOP Guilloche may appear white under certain light conditions but it can be pink-ish too and under certain conditions you can see lots of colors sparkling of the dial.
The dial on the Stealth isnt white either. It is grey in lots of different shades.
FYI, Lange has also a WG Lange-1 available with a grey dial (ref 101.030) which I love. The dial is darker then that on the Stealth. Worth seeing in the metal imho.

Lange did offer the famous 101.027X: a WG Lange-1 with argente (=silver) dial, which is a lighter shade of grey then the dial on the Stealth, with blued hands. A stunning combination. Very legible and very teutonic. I think this Argente dial, with the exception of the Cellini LE Lange-1 as mentioned by CR, looks the most like a white dial. So lots of words and pictures but only one serious advise: visit an AD and see as many watches as you can. Im not sure about the 110.030 but the 101.027X isnt produced by Lange anymore. I know one was available in the Waldorf Ast. but that one might have been sold.
Whatever model you end up with I think you will be the owner of a fantastic watch with a Iconic status and a stunning design; one of a kind imho.

btw: if you see the Stealth in the metal, dont forget to ask the AD to put it on a Datograph (style) strap. That strap is THE ULTIMATE strap for the Stealth (and it probably would work out very very well on the WG grey dial Lange-1). It is a croc strap not black but more charcoal in color and the stitching is in slightly contrasting grey.
