I like your choices of the Rolex 1908 and the Cartier Tank Normale. Great looking pieces, though IMO they're not quite all that they could be.

The Rolex 1908 movement could be finished to a higher standard for the price point (or just lower the price). And while I absolutely love the platinum Tank Normal bracelet, the white metal handset leaves me cold. That watch would be a showstopper with a salmon dial and charcoal hands and numerals.
I few standouts that I was happy to see were Rolex's entry into titanium with Yacht-Master, the creative whimsy of the jigsaw puzzle Day-Date and Lange's innovative dual use of the pushers on the Odysseus Chronograph. Honorable mention to IWC's titanium Ingenieur as just a really spot-on, good looking daily watch. The crown protectors are a nice extra touch. I can't wait to see the Ti Ingenieur in other dial colors. And best of all, they'll probably be available to actually buy at retail unlike all of the others mentioned above.
