I own both
I have been fortunate enough to own both a Dornbluth 99.2 and a Habring manual wind chrono with engraved carinthian bridges. On the movement side I am going to give the edge to Dornbluth. This is purely from a handmade aspect and the warm copper colored glow. I think the overall Saxon aesthetic is very well balanced on both sides.
However from a mechanical point of view I would give Habring a hefty nod. From customizing the watch Habrings are pros. But that's not to say Dornbluth makes cookie cutter watches. Just look at Jockes new regulator and you get the point.
Hate to be of no help but you really can't go wrong with either. The finishing and fit on both watches are appropriate for the price point. But , honestly if finishing is supremely important, then the entry level independent is not for you anyway. GGo with the watch you like and the brand you want to support.
