Yes you can request that Tiffany is not on the dial.
But if it is already there they are unlikely to replace a dial.
Where on the dial the "Tiffany" is placed is determined by Patek.
Which watches are Stamped with the Tiffany name is mostly determined by Patek. I would guess Tiffany passes on the requests from their customers to Patek, but Patek makes the call.
The Stamp is only done up to a certain level watch these days, The last time I asked, there were a few 5960's done and nothing more complicated. Now I do not think they even do the 5960's.
This does change from time to time and could change again.
At one point Patek was resigned to end all the stampings.
Tiffany is the only company that Patek allows to have their name on Patek watches other than special additions for some very special dealers.
Patek does Special Tiffany only watches as well. Even a few one off's.
While Tiffany does have stores at "malls" all over the world, as does Cartier, Bulgari, Harry Winston, Graff, Arpels, Etc.
There are only a few Tiffany stores that sell Patek, and none of them are in malls. Tiffany was the first seller of Patek watches in the USA.
