The real thing is so damn smelly that this enthalpy-concentration diagram comes very handy when you want some equilibrium data of vapour and liquid phases of water and ammonia smile  It is useful for e.g. assessing distillation and other vapour/liquid systems.

Hm, maybe with a bit of persistence and stamina you could establish your own Jed-o-Gram of mocca and water to determine the optimum dosing of coffee to get the perfect aroma??
