The bar you are trying to unscrew threads into itself from the other side so you will require two screwdrivers. One end to stop it from moving while unscrewing the other side. I normally use a little low strength loctite (red I think?) when putting back t... 

they will come off easily once they are first "unscrewed"? Don't know if I want to apply loctite as I can foresee I will be swapping strap frequently... hahaha

It's similar to those on the Breguet deployants, and in my case, I've unscrewed it many times and have not applied loctite, but it's not come off or gotten loose so far. Then again, it will depend on how much flex takes place on those points.
