By and large the majority of watch buyers appreciate having a date. And most Mille Miglias have one (the 90th Anniversary in RG [CLICK] didn’t for instance), so it would be a case of quite some reengineering to remove it.
But I agree with your general sentiment and there are definitely people that prefer symmetry to practicality. Check out MTFs post on the LUC 1963 Chronograph Purists Edition - that one’s without for instance
