I get too literal on this question
That is, I start asking questions like, "Why only one?"
Is it because I'm getting unexpectedly marooned on an island, Gilligan-style, and so I only have the watch I'm wearing? In that case I want my toughest and most reliable watch.
Is it because I have to sell everything else because of financial exigency? In that case I'll just keep my cheapest watch.
Is it because my home got burgled while I was out? Which one would I be glad I was wearing if all the others simply disappeared? In that case, my most expensive watch!
Or is it because I'm bored of collecting and just want to wear one watch every day? That doesn't even sound like me! How am I supposed to know what that guy would want? Probably an Apple Watch.

That's how I feel getting older but then I've never been a hoarder and I don't even consider myself a collector.
