I must say I agree with you on the sapphire back being spoiled by too much writing. What’s the point of an observation window if you can’t see through it?
As far as big dates go, I don’t know of any GS Big Date, but here’s a Seiko /Credo watch powered by Spring Drive and featuring a big date:
