Tough question,
I think it has to be an individual choice. Some might want to spend all their money on one top end watch, while others may spend less to have multiple pieces. Finances, family situation, other responsibilities are going to be different for everyone. Set your own number based on what you think you want/need. As stated by others, for most of us here there is always one more, no ceiling, never enough.
