I notice many great watchmakers started with learning to repair old clocks. In this way, they deeply learned how classic movements are made. I'd encourage you, as you continue your watchmaking studies, to see how you can apprentice under experienced watchmakers and clockmakers.
Nowadays, hand finishing has become more important (perhaps overly so) to collectors and may be a good way for you to distinguish your watches.
Also, while you study, notice that people skills and business skills are ultimately just as important as watchmaking, so these are vital skills as well.
