Most of the more modestly prices Independent watches are based on off the shelf movements modified slightly.

So generic parts should be available for the movements, and even if the maker is no longer around, a qualified watchmaker should be familiar with the base movement.

The more expensive/complex pieces could be more of a problem, although the higher value might make making a one off part commercially acceptable.

Parts are no longer available for my pocket watch from 1699, but the right kind of watchmaker was happy to make parts as needed (although clearly needed to be paid for his time in doing this). The mechanism is pretty simple though...

I think the biggest risks are around exotic materials, small complex shaped parts etc. And some of this applies to big brands too...
