The watch you have in mind I believe is the rare Amvox 2 transponder. You can open/ lock your Aston Martin by pressing on the sphere crystal at 9 or 3 o'clock respectively.
The Lock function on the Amvox 7 (as well as the Amvox 2) is to lock the sphere crystal, so that it won't pivot and therefore you won't accidentally trigger/ stop the chronograph unintentionally by touching the watch face.

Uses the 9/3 side of the crystal. I have this one, but it seems that it only works with an Aston Martin car. I had the battery (it uses a battery for the open/close) removed disabling this function. I was afraid to have a battery (that I will forget) leak...
