Not an easy call and you'll end up with a pretty gorgeous watch either way, but given your description I'd probably suggest the 5140P....

First, its really remarkable degree of elegance (even though I admit I like the 5320 dial better -- one of the most original among all Patek PCs! ;-) Second, the 5140P has a modern yet very classical design, which will forever be good looking...your next generation will certainly appreciate its timelessness by the time they receive it. And finally, keeping your "Patek platinum rate" steady at 100% is a pretty noteworthy achievement on its own!
