Yes. They switched a Mother of Pearl dial for me...no defects, for aesthetic reasons only.

 

My wife has a two tone gold and stainless steel (jubilee bracelet).  MOP dial with diamonds.  She would periodically comment that she wished the mother of pearl had more variation and color.  After 12 years of ownership I decided it was time for a service and took it to the Rolex Service Center in NYC (53rd and 5th).  I told them my wife wanted a different MOP dial.  They said they would check.  24 hours later they got back to me with the service estimate and said they would switch the dial.


When the time came to insert the new dial they asked me to come in and choose between two dials they had in the safe.  I wasn't allowed to touch the new MOP dials as they are brittle.  So for a bit of $$$$ I got my wife the new dial she wanted.

I don't know if each and every RSC will be as accommodating.  I have had multiple watches serviced by Rolex in NYC.  They under-promise and over-deliver.  Work is always done in half the time they say it will take.  Great service.  The Lindt chocolates are a nice touch too.  Other companies should learn from Rolex customer Service.  

I also have no complaints about Patek Service in NYC.  Wonderful people.  Larry Pettinelli was a true gentleman.  I will miss him.  Good luck to him wherever he is.
