To comment on your questions:

1. Will it function correctly after being sealed for five years and should you be concerned? Won't know until it's wound and observed.  Technically though, it's about time for a service according to Patek. The only possible downside for you would be the cost of a service and the time involved since the paperwork has been dated and it is clearly out of warranty. 

2. The sealed status would not, for me, command a significant premium. In fact, I'm a little uncomfortable with sealed watches altogether, but for others it may be a significant issue and are willing to pay a premium.  As others have mentioned in the past, buy the seller.. not the watch.

Anything is possible with a sealed watch. I had an Aquanaut which remained sealed (I didn't want anything to happen to it) until the client came to pick it up for an anniversary gift four months later. She came, I opened the watch, set the date, manually wound the watch so it would be running when he received it. A week later he came in explaining the only way the watch will function is if it is manually wound. He said the rotor was stuck and he was right. Had the watch been opened, I could have caught the problem and had it corrected before the anniversary date, as it turned out, it took 3 1/2 to 4 months to correct.  The point is ... there could be issues and in your case, I assume you would be responsible for the cost of any service work, if required.
