Those mid day scenes were challenging due to the lighting conditions and extreme contrast (dark shadows and bright sun).  Do you have Lambrecht's Way Beyond Monochrome?  It's an excellent and thorough resource.  His advice, in general:


Low contrast scene (rain, fog) expose at published iso and do not adjust development.
Normal contrast (bright, cloudy) expose at published iso minus 2/3 stop, and shorten development 15%
High contrast (bright sun!) expose at published iso minus 1 1/3 stop, and shorten development 30%.

So for a high contrast day you could expose iso400 film at iso160 and tell the lab to shorten development time by 30%.  The result should be good detail in the dark areas (from reducing the iso) and no blown highlights (from the reduced developing time).
