Both D3X and D700 are great cameras for the macro pics we do here...

 

As for me, I have only one camera (D4S) that I use since long but the secret resides I think in the lens. I also use the same as you the great Zeiss 100mm macro Planar for almost all watch photography as you will see in the exif details of my gallery www.flickr.com 136621560@N04/

Funny I was just hesitating between getting a Laowa 25mm or a 60mm both ultra macro with f/2.8... Did you try the 25mm also ? Both seem great options... 
Needless to say that the lighting is certainly also key; while you use LED lighting if I remember well, I shoot most of the time with 2 elinchrom flash heads. I should try continuous lighting one day to see how the outcome is...
