I could not agree more with you about the impact of a strap on how a watch sits on the wrist and also how it looks in terms of lug to lug.
I tried the 42mm Fifty Fathoms on the rubber strap and it was significantly smaller than my 40mm Sea Dweller, to the point that the Blancpain salesperson and myself had to triple check the tag of the watch to be sure it is not the 38mm version. It was insane. The 42mm FF was clearly more compact than the 40mm SD because of the short lugs but also with the rubber strap that does not extrude at all (the opposite) the watch was like a 39mm watch. Brilliant
