You might be underselling the sbgj003 a bit...
Great photos, and a lovely pair of GS limited edition hi-beat gmt! This is not to dismiss the quality of the 005 and 021 at all, but I think the 003 more than hold its own against the other 2. All 3 watches essentially have the same dial pattern and finish, except the difference in colour. Using seasonal themes as inspiration is no doubt a clever idea. I picked the black dial however because it serves as the best background to show off the razor sharp hands, which I consider to be a GS signature. Another advantage is the harmony between the date wheel and be dial- they're of the same colour.
Since the special oscillating weight personally doesn't do too much for me, I'm really quite happy with the 003.

003 is a nice GS but ... it's not in the same league as 005 and 021, IMHO This texture has been already used on a black dial, for SBGH005, while 005 and 021 are unique. The color variation is much more wider on both green and red dials. Concerning the bac...

I do see your point on the black dial being used in the SBGH005 first. By the same logic, are the dials on 005 and 021 truly original? New colours-sure; but it's the same pattern. I had multiple opportunities to pick up a 005 and I passed, never considere...
