Since VC has the watch and it sounds like they will issue a certificate of authenticity, which will include many detailed pieces of information about the watch, such as year of manufacture, movement, serial numbers, etc, I suggest you also request they give you an appraisal of the watch.
Just keep in mind that what a watch is worth for insurance and what it would net on the open market are two completely different numbers, with the former typically being materially higher than the latter.
