I'm not a specialist VC collector but have some experience of many competitor brands.
Some of them shared the same 'base' movement with VC but numbering is different.
I am assuming you get full power reserve from both watches despite the different feel.
Manual winding 50 turns to full reserve sounds correct. It may be 'firm' but not noisy grinding action. The 'stop' at full wind is distinct.
Manual winding 250+ turns is unusual. Perhaps you have exceeded the full wind and pass the 'stop' but the protective ratchet is doing its job too quietly? Usually the audible and tactile warnings fom the ratchet are quite obvious. The outcome of failure is a broken mainspring where unlimited turns makes no difference to the feel.
The key point is that you have two watches with the same movement and they are different from the beginning, from new. That was a warning already, to check them when first noticed.
You need to take it to the GVA boutique that you mentioned, in the first instance for a professional opinion.
