Some terrific watches and great shots here! I'll throw my hat in with three:
If it had to be only one:
LE of 500 in 1996 (the year my daughter was conceived); part of the Reverso revival, with one of the only shaped integrated chrono movements I've heard about, and possible the first post-quartz integrated manual-wind chrono, to boot.
In keeping with my predilection for shaped watches (and begging pardon for re-posting from a recent thread):
Per the other day: "This one dates from when Roger Dubuis actually was Roger
Dubuis, the Sympathie had a shaped crystal, the watches were hand
assembled and finished, and every design was a limited edition of 28. I
don’t think anybody has made watches quite like this since Dubuis left
the company to his partner prior to the Richemont buyout."

In retrospect, 1995-2010 seems like a heyday for shaped watches. I mourn the passing.
