A pity this Sinn is not available any more. I like these clean tool watches a lot and this is certainly one of the best exsamples.
After reading the page you pointed to I remembered that there is a similar watch by Tutima, called Einsatzuhr. It differes from the EZM1 in that it features an hour counter. The interesting thing is that it is based on the Lemania 5100 also and seems to be still availabe. At least is in presented as part of the current lineup on the Tutima web site. So maybe they have some movements left (?).

That looks like a great diver
but what is it in reality? The bezel is counting backwards like a mission timer. And what are the pushers for? I do not see and chrono counters or additional hands? Could not find it on the Sinn web page. Anyway, it is looking great to me. Best, Martin

The pushers are to activate the chrono ( lemania 5100 caliber ). I used the bezel timer to cook ( penne rigate 11 min ) click here
