However I would personally willingly go to more phenomenal and amazing rattrapante (ALS, FPJ, PP) or better vintage beauty rattrapante (MinervaB), or better value ingenious rattrapante (Habring & IWC).

Opinions is What is this supposed to be. Just my opinion is as important as yours, hope you are never in the same situation and just your opinion is not erased arbitrarily

Having visited the Atelier de Chronometrie and spending time with Santi and Montse (who also own Mim and Crocket), I have an incredibly hard time believing they would do such a thing. They struck me as genuine, honest and down to earth people who are incredibly passionate about sticking to their vision of what romantic watchmaking should be. Seeing their passion and process, you get a really good feel for how much incredible time and energy goes into each watch they design.
I also can say for a FACT that the AdC 8 does not use the EXACT same movement as whatever this Breitling Rattrapante you refer to is. If you meant to say that they share the same movement reference, a Venus 185, then sure, but you did not represent your point fairly. The AdC 8 used a donor Telda movement which was completely deconstructed and remade from the ground up.

Glad you had a good experience with them. Not all people have the same experience. You will always get a different treatment when you are a "potential buyer", even water will be offered. People shows their true colors in difficult situations. Thanks for taking the time to read and Express your opinion. It's very well taken and respected. About the watch itself. That watch was sold very fast actually. Hopefully not the same one.

Why is what kind of bench they use important, what about the profile of parts is wrong? Why is the anglage poor?

The anglage question is the most interesting. If it's not a problem, I may start a new thread on the topic of AdC's anglage. I had provided pictures of AdC's anglage to a watchmaker with a proposal. If there's something wrong, it could be a problem. That's one reason I have been following up.

But the more independents are going down the road of using ebauche movements and calling it handmade / handcrafted, the more I feel we need a distinction between truly handmade (GF Handmade 1) and watches like this where 50 parts are handmade and the rest of the watch is hand finished. Do you guys agree or just don't care?

And besides handmade stuff is not really better. The handmade stuff like Naissance d'une Montre and Oscillon watch movements seem to have very basic structure. Maybe it's difficult to create exotic shapes with handmade movements?

First of all, handmade shapes are simpler because you have to - obviously- machine them by hand, so circles or free shapes via Panthograph.
And why there needs to be transparency when it comes to handmade is quite simple: Would you pay the same price for a hand finished movement and 100% machined movement of both have the same finish? Most people would not and thereby the price of a hand finished piece is justified by the time and manual skill that went into the watch. Same goes for the production method ranging from CNC manufactured movements, over partially hand made movements up to fully handmade movements. And even there, the producer needs to be transparent in regard to rubis or Saphire parts.
It’s not an easy topic especially as producer obviously want to push towards higher prices and many collectors seem to think that their Patek is a handmade watch...
