Surely you haven't made it any easier for us to pick a winner. The only solution, for lovers of such a complication ..... is to get both. 
I wouldn't discount the TZ either.

First, i will say that my view concerns just the Patek and JLC. I have never had the Lange. Journe or Parmigiani on my wrist or even seen in the flesh. So......5110 vs UTT?
The size of the two watches makes a difference to me. The Patek is much closer to my ideal size given my specific wrist. I also think that its size is a big compliment to its style. It is an elegant watch.....one with panache. The 37mm size suits this style. The UTT is, as you say, much more of a tool watch and so can cope more easily I think with the 42.5mm. However, the size and depth of the UTT makes it a much less comfortable wear for me, and on this score I prefer the 5110.
I think it is wrong to compare the two on aesthetics simply because it is comparing apples with pears. The Patek is panache....the UTT is more tool. I vote for 5110 on the panache rating, but the UTT on the tool rating! Having said that, i do think the dial on the 5110 in all of the metals can be breathtaking...a certain wow factor that I don't feel myself on the UTT. The 5110 just has something unusual and special.
In terms of complication, and again this is a personal issue, but the world time complication is more useful to me. I prefer, when travelling, to see in one shot, the respective time zones. I don't want to have to work it out by looking at the case back. So, again, for me...a personal view.....I prefer the 5110.
Which would i rather have IF I NEVER OWNED EITHER? This is an interesting question. I think I would be swayed to say the 5110. Would i trade a 5110 for a UTT? No. Would i add a UTT? Yes.
To my mind, i have answered my question on which I prefer.... the 5110. Do i still like the UTT a great deal and would i consider adding it? Yes.
The Patek World Time is indeed an horological monster, a milestone.

The UTT is 'unique'like its name,so no its not a world time per se ,but a very clever tool to tell time somewhere else in the world(or your own time too..)
Clever and sophisticated like a real Duometre should be.

I suppose no other version will be released,after you told me no other white metal version will be issued…

An excellent review
I travel up to 50% of the time in my job and a good travel watch is vital to me. I've considered the PP 5130 but found the dial too busy for me, and I can imagine dial legibility would be a problem for me during long haul flights when cabin light is dim.
My travel companion is a very functional Lange 1 Timezone, which I find is very easy to use.

As explained to Nico, the photo was taken for me at a Lange/Leica event. It was of course taken with a Leica camera but to be honest, I was a bit disappointed with the result. I just think it's a bit too dark for my liking. Please enlighten me.

hello ian, so you had the chance to use one the greatest camera, the LEICA S. this is a famous professional one, wich provides DNG files, as well as RAW. these files have to be adjust in prostproduction with photoshop, lightroom or capture one for example. you know, digilux 4/5 or 6, same as nicolas, should be better in that case! kind regards. olivier

Very late to the party with this response...
But then again, this was a monster of a post which I only had the pleasure of re-reading today!
I think that the UTT occupies a special place for the world traveller.
I am reminded of that time when you posted a series on the Tribute Reversos from awhile back; whether to get one or two.
Similar to my response then, I think the UTT is the watch that you'd want to wear when you're done with a business meeting and would want to segue from the more serious Patek to something more relaxed whether it be for a quick TP GTG drink with friends or killing time in some country as we move from weekday to weekend.
The UTT would be something like a lifestyle world time watch where you lazily and pleasurably try to determine where you are in this part of the globe without unstrapping it to look at the back.
The Patek, for when time is of the essence.. the UTT for when it is not
