GMT's
I'm trying to decide between the various Luminor GMT's and I'm not sure they all work the way a Rolex GMT does. With the Rolex GMT you set the 24 hour hand for "home" time, and then set the other hour had for "local" time. From past experience this seems to be a very simple and easy setup to use when traveling frequently.
I know the PAM 159 has gone but could still be found. The PAM 244 seems similar. And then there's the PAM 88 and PAM 270, and in the hand-wound corner the PAM 233. I like details of all of them but need a bit more of an understanding of how they function as a GMT.

It certainly seems like you've got the "setting" thing down. Now all you have to do is choose from an extremely wide variety of PAMs that have the GMT function. I happen to be a GMT "freak" and own the 29A, 88K, 89E - all GMT's but different in their presentations.
There are others, of course, including a nice 297 that comes on the new bracelet.

All the Panerai GMT's are very easy to setup
so you shouldn't have any problems with setting the GMT hand. It's as easy as the Rolex GMT models.
Just the main thing which will give you a hair pulling is all the various GMT models. Furthermore, the new P.900X and P.200X models have the GMT function along with the "GMT" designated models such as the PAM88, 159, etc.
So I'd first narrow down the choices by picking a Luminor or a Radiomir.
If a Luminor, then narrow it down more by picking a Luminor or a Luminor 1950.
And then from there, it should be a little easier to narrow down the remaining choices.

I believe the short answer is, "no". None of the Panerai work the way a Rolex GMT does.
My understanding is that the older style of Panerai are useful for keeping track of another single time zone or keeping track of GMT or useful as a 24 hour hand in your home timezone. Unlike the Rolex it is the 24 hour hand that quick adjusts and not the 12 hour hand. It "can" and "has" been used as a travel watch but it is not as straightforward as the Rolex.
The new style of Panerai GMT (in house movements) works on a 12 hour cycle, unlike the Rolex 24 hour cycle, and use an AM/PM indicator or day/night window. Much more useful as a travel watch AND for the aforementioned functions. However no Panerai, that I know of, has the 24 hour bezel which I would think would be quite useful in many situations AND the in-house movements are significantly more expensive.
I hope that I was reasonably correct with my information and possibly helpful in your search.

270/233 are as good as ROLEX
Old Panerai GMTs (based on 7750) are mostly the opposite.
The 24hrs hand has to be the LOCAL TIME hand...and not HOME TIME. This is the hand you have to set in "hour" steps. This mainly means that you have to set the full watch each time you travel to other time zone.
233 and 270 do the right way.
The GMT hand ( not 24hr hand...but 12hr longer hand of the watch), is your home time. And you can easily change the small hour hand in one hour steps.
The long 12hr hand also is linked to the am/pm indication, that helps you to track if its day or night at home.
The new 3 days automatic models don´t have am/pm indication, so I think its not very useful if you really travels far away.
The only thing its missing is the date fast change, that I think Rolex has.
