If I understand your question correctly (I don’t think butterfly deployants have changed and have been around for a long time- if you’re talking metal bracelets. If it’s for a leather strap, I’m unfamiliar).
I’ve had both with metal (butterfly - JLC and single Rolex) and a single with leather (cvdk)
In would say single is easier to adjust and if the baseplate on the butterfly gets bent or torqued even slightly, the double tends to easily pop open. For this reason my preference is single.
Deployant clasps
Gents - are the original single deployant clasps still available from ADs in white gold, or just the newer double "butterfly" style? Thinking the beefier original version might suit my 42mm Zeitwerk bit better, though not opposed to the newer style.

WG single-fold Lange deployants are available, but ADs are not available.

I use deployant, but i have also pin buckles. It depends what i like. Sometimes this and sometimes that. While i am very active, a pin buckle hold my watch very tight. While relaxing, visiting family, to IKEA what so ever, a single deployant. ...
