An AP Royal Oak Chronograph would be a terrific addition to your Panerai GMT.
You have already identified one of the major strong points of the silver dial ROC - its versatility. I have discussed this topic over the years with some of my AP enthusiast friends, and we all agree that the silver dial Royal Oak Chronograph is perhaps the best "all in one" watch offered by AP. It really is at home in nearly all venues.
As far as replacing the bracelet with a strap, I recommend checking with your authorized AP point of sale. I am not sure if steel strap links are available for purchase for the 41mm Royal Oak Chronograph.
