As for the hacking feature, the later L.U.C 96H24 in the Pro One GMT has it.
May not be appropriate to have a sapphire caseback for a rating of 300m, in case some use it for diving. Perhaps L.U.C
could consider having the rating marked on the caseback instead, giving the option of below 100m rating with a sapphire caseback
and anything above, then the solid caseback 
For your timing, could you fully wind the Pro One by manually turning the crown for about 90 turns, and check the daily-rating again.
If it is still at -15s/day, you should sent in to be looked at.

The Pro-One was also my introduction to the Chopard LUC series. I have it now for 3 or 4 years and I still like it very much. Yes we all know about the loose bezel, but mine is pritty tight now (only if I put my hand in the pocket, it might shift a notch)...
