I, too, prefer the manual watches—not only the Journe Sourverain collection but for other brands as well. The tactile sense of winding is a small gesture in an often rushed morning. I have often read that for reasons of chronometry a manual is more accurate, but then I am not a stickler for extreme precision.
Your question, Brad, is ironic for me: the Resonance, both tourbillions, and the CS are the three iconic Journe pieces in my mind. The movements of each are precise, the dial design original yet with a nod to horological heritage. My favorite, though, is the Calendrier. There is no logic in this madness.
