Horological Meandering

Given those constraints

 

I'd go with something steel-cased, but thin enough that it could still be work under a shirt cuff.   Personally I'd also avoid 7750-based movements.  They are tough and accurate, but compared to the rest of your collection they'll feel very rough. 
My thoughts would be:
Blancpain 2100 (can be gotten with a big-date) or the similar Flyback.  They make a big-date flyback, but it's pricier and larger.  Personally I think the X71 bracelet BP makes is one of the best ever, and I have weird, hard-to-fit wrists.

UN Marine or GMT+-  The +- gets you a big-date and a nice gmt complication and is available in steel with several dial colors. 

GO Senator,  There are a couple of sub-styles that have a nice big-date complication.  I actually prefer the older Senator to the new, cal100 based versions, but I'm in the minority there

Chopard LUC Sport 2000 or Pro One.  The sport has been discontinued, but the Pro One is still out there, with a much better bezel than the orignal.  You don't get a chrono or a big-date, but it's a good, solid watch, with a really nice movement and with the sport and a leather strap it fits perfectly under a shirt cuff
