Black enamel is difficult
Due to the challenges in obtaining a consistent black colour across different batches; in fact, some brands have told me it's impossible to achieve a black colour that is completely, utterly identical for different productions runs (these differences in shade and tone are not visible to the naked eye though). I don't know if that is Patek's reason, but it is a possibility.

Each dial is a subtly different shade of black, so each watch is a piece unique. Pair that with unique rusty steel from a sunken ship, and you have fusion. :-) - SJX
