I once asked this from Patek.
The manipulation of seconds does not harm the movement.
The moon phase is accurate enough. It will be totally accurate over the life time of any human. And be sensible: you will anyhow take the watch for service at least every 100 years. They will then adjust the moon position before giving the watch back to the Old Man.
