In the UK, one would imagine that the fish and chips available would ordinarily be to a high standard given that the country is famed for, or at least associated with, the dish. But, typically, the opposite is true, and soggy batter and limp, greasy chips are the order of the day.
Those you pictured look completely perfect though and make my mouth water.

I know Crispiness is paramount with Fish & Chips
when I lived in the UK we ate in evey place that was recommended. Harry Ramsden was good then, and a place called Jane's in Byfleet was our favorite. Chef John outdoes them all. Mike
