... or the perfect amplifier, it varies depending on the coffee, the extraction time, and the flavours you are after. You might try turning down the temperature at the group head a little. My rule of thumb is 90 to 96C, so you may be extracting a little hot. But it's trial and error. Look at the Coffee Geeks website and you will find plenty of information.
