All fine, but you forgot one: a manual wind chrono ;-)...

Let's just take the Frédéric Piguet Cal. 1185, an automatic three register watch, which has been modified for a mono pusher. Or the Patek Philippe Cal. CH 28-520, which carries a central minute hand and is derived from the CH28-520 with subdials.
Combining the three should not be an issue as the concerned units are independent from each other. But then be consequent and execute it as a manually wound one ;-)
Concerning your other question - YES, I am sure there are more commemorative watches! I can't see the case for a company like Zenith to produce only a - in respect to their remaining collection - relatively expensive LE. This is further substantiated by the message send to PPro by Zenith's new CEO, Aldo Magada (see our new masthead!):
