There is a fully authorized Rolex Service Center in San Francisco. The wonderful team there follows the precise instructions I give; DON'T POLISH THE CASE, in cases where it's absolutely necessary, do a minimal and light polish.
I've seen so many watches with fluted bezels that went to Rolex DALLAS and the fluted bezel came back so polished that the fluted bezel was significantly and obviously altered!
All I can say is be very precise. Try to find a retailer that has their own Rolex-authorized watchmaker on site. Someone where you have access to speak with directly. I'd avoid the Rolex Servicing Center as much as possible.
Take photos of the watch before you release it. Literally on the newspaper with the date and headline in the background. If it comes back significantly altered due to overpolishing, you have evidence.
