I like it because it’s different from the steel model now I just need to decide if I like the submariner enough to buy the full gold version. Any thoughts on that reference?

A 1x/ weekly or 1-2x/month wear for me. Agree with the comment here that the best aspects are the stealth + weight together. And of course the build quality is really impressive every time you put it on.
Love this one a lot...love the blue and love the 'under the radar' aspect of this Sub. As you mention, lots of options for this price range...are you looking purchase new from an AD? I think they are under retail on secondary market. But in the end, buy what you love, it's a wonderful watch!
Yeah I noticed that after my visit I checked online a bit. The good news is for these gold version the secondary option are good for availability If I can't decide in time for the AD

And having a heavy watch on the wrist is satisfying to the wearer IMO. People who aren't in "the know" think it's just a steel watch. AFAIK, the no-date subs are only in SS, I believe. In the real world, it seems that these WG models are priced best on the used market (if I am allowed to write that.) So, if you are truly bitten by the bug for one of these, continue to check the numerous possibilities.
The weight would be an immediate killer criterium. But of that doesn’t bother you, go for it! Might be a bit of a conceptual challenge - being a good tool watch - but then again let’s not pretend that most are still used as tool watches, so all fine
