You would not miss with the 7057, but the 7027 looks like better solution - it's made with no compromise, with the movement designed especially for it. If you like white metal, go for the white gold version, though yellow gold one is closer to the philosophy of this watch and of Breguet in general.
Particular details on the 7057 seem (or not just seem) like they are improvised: position of the power reserve indicator, inner bezel between the movement and watch case (reminds to Anfiteatro from Bulgari) and enlarged dial which covers the central barrel and its jewel in not most balanced way. If
