Little English translation:
The face shows local solar time which is different from the "official" time of the watch. In order to find wristwatch time again, you have to add 35 minutes more or less a correction depending on the day which is given by the opposite graph (equation of time).
For instance:
The twelfth of February when the solar face shows noon, the wristwatch shows 12h + 35 mn + 14 mn = 12h49
The third of November, when the solar face shows noon, the wristwatch shows 12h + 35 mn - 16 mn = 12h19

This Breguet 5887 has a running solar hand (running EOT) like the Blancpain 6638-3431-55B. They both are simpler as you don't need to calculate to know the official time and the solar one. You can directly know them with two hands. Best wishes Alkiro ...

It's a constant which is related to your positioning on earth (latitude vs Greenwich as reference). For instance, here in Geneva, its +35 or +36mn vs Greenwich
