Burgers are tough to cook to a nice medium.
The optimal window is short. I don't like ground beef that is less than medium, but I always target pulling them at this temperature. Good and juicy, but not too juicy!
As for alcohol, you are not missing much there. Liquid poison. I don't drink much, and would have no problem quitting.
