I would choose Patek's 5100.
I like the shaped caliber and the shape of the case. Whereas I've never warmed up to GP's 3 gold bridges tourbillons. It's hard for me to say why. Too robust and regular, too many screws. Just my taste (or lack of it) of course.
Hard to compare
The PP is an amazing piece. But the GP is wholly unique. Go with your gut.
Patek, undoubtedly, for me. I prefer when watches have a dial
And I would consider a Cabaret, too.

One of the best PPs of the last 25 years but a GP tourbillon is a different pleasure to look at. I would go for the GP. There is no bad choice.
Definitely the GP
The PP has a wonderful movement but at 51mm long, it is not suitable for the smaller wristed folk, a category that I fall into.
