One of my favorite quotes by a French author I read when I was younger echoes your quote and is my motto when it comes to any creative endeavor whether it is writing or the dial of a watch. "Perfection is achieved not when there Is nothing more to add, but when there Is nothing left to take away." -- Antoine de Saint-Exupery.
One delicious contradiction to all of this idea about 'simplicity' is that FPJ added a few structural wrinkles of complexity to the movement, giving us the illusion that the center wheel isn't coupled to the mechanical wheel; that coupled with the decision to use a dual mainspring configuration (which arguably is a simple solution to the longevity of the mainspring) are clearly a few steps removed from the simplicity the watch requires to operate. This wrinkle is definitely the flashiest aspect of the watch, comparable to a 48+ mm dial; but ascribed to the movement for only the wearer to see when the watch is removed from the wrist.
