Let’s say there’s a bridge with 2-3 jewels in it

 

When they change the rotating parts (a wheel or two) because the pivots are worn, they want to swap the bridge to a new one with jewels installed already, that fit the new wheels which have larger pivots to reduce tendency to wear.

They can’t use the old wheels (worn), using new ones will require new jewels which might not fit into the old bridge (unless they re-drilled the bridge which may not be possible), and thus you’re going to get the new bridge or no service.

There are other scenarios but the odds are they upgraded the newer movements to reduce this wear issue and they aren’t going to go backwards in reliability just for you.

I’d take the new stuff and/or sell the watch.
