The only thing I am not sure about
Is the hands shape, they are a bit too pointy for my liking (while indices and hands are too fat on many of the new models).
Yes, very pointy indeed, but it doesn't bother me, personally.
The thing I wish was different is the dial texture: I think I would like a matte grainy texture even more than this satin-finished one.
Many of us here seem to share similar thoughts
Wanting a dial from model A, hands from model B, movement from model C...Sadly for most of us such level of customization is not possible but I have on multiple occasions considered buying two watches to make my own franken (starting with Panerai).

I've always preferred the "double signed" dials ('Seiko' and 'GS') to the 2018 rebrand.

If forced to choose between a black dial version of your GS . . .
. . . and a manual wind version of the 60th Anniversary Railmaster I'd go crazy. 😵💫 I've tried it on at the LA GS Boutique, Emmanuel; it took no small amount of willpower to pass. A black dial would be irresistible. Best, Art
I completely understand your dilemma and your preference for a black dial.
The opaline, almost satin-finished dial, can seem a bit bland, especially as opposed to a black dial. But I find this color and texture very faithful to the traditional Japanese aesthetic. I hope at least one of your two wishes will end up being fulfilled...
