As the only respondent from behind the Orange curtain I have several suggestions to
consider.
In south Laguna I would agree that the Studio at the Montage is a consideration - good food but expensive.
Up the coast a bit is a favorite - Tabu - good food and an open kitchen so it is fun to watch the chefs do their thing.
In Laguna I have heard excellent reviews about Broadway.
There is also Las Brisas - very good Mexican food with an unbeatable view of the beach and the ocean. A standard in Laguna.
I agree that Blue Fin is good for sushi
In Newport by Lido Island there is the Cannery - very good food but a bit of a scene and on the loud side.
A good French restaurant on the Balboa Peninsula is Pescadou.
As for Marche Moderne we have had dinner there and had an excellent experience but it is in a shopping mall.
Across form South Coast Plaza is Pino Provence which is quite good.
Hope that this helps
Have a great anniversary.
Mitch

Congrats on your wedding anniversary! My limited experiences in the OC area is near the Dana Point/Laguna Niguel area that DRMW mentioned. If you're staying at the Ritz Carlton the location is fantastic and overlooks the Pacific Ocean. Service is outstand...
