My dream watch would use a cal 2755, but with the tourbillon only visible from the back and the PC indications being guichet windows., 
If it is a mere mortal that is gifting...I'll take any of them, I don't want to be considered greedy, ;-)

If I am allowed vintage I would go for one of the plain simple ultra-thins with a 1003/2 movement. Contemporary - a Quai de I'lle annual calendar with transparent dial in rose gold and titanium.
