I understand the frustration, for sure!
Now, on to your question...
The printing and moonphase on the Dato Perpetual are too small for my taste, and the dial too cluttered. That experience doesn't improve with age 
As others have said, an original Dato would do you well. You mentioned not being able to get over the 36-hour PR -- that the short PR was the hurdle. I assume that's more of a mental impediment than a functional one, if you wind your watch every 24 hours. I do think you'd enjoy it, and personally I never notice the power reserve length because I wind it every AM when I wear it.
Alternately, again as others have said, you could use a Sax-0-Mat movement. You may want to pull the trigger on an Anniversary despite the relatively high price -- though still much less than a Chronmetre Bleu, lol, which shows what a bizarre world we're living in!
I'll throw out one other, much less expensive Sax-0-Mat possibility. It's one that nobody (else) likes, nobody pays attention to, nobody seems to own, and is relatively inexpensive. It's the 301.021. Yellow gold, classic dial, nice and thin, and it has that exquisite movement. At least rule it out! .

You obviously have some strong feelings for the 1815 family. The one I saw missing and you will probably have no challenges acquiring would be the 1815 Up/Down, which is an ageless, classic beauty IMHO!
I absolutely endorse your inclination for the Langematik Anniversary. So thin and wearable for a Lange and arguably their best automatic movement. I’m not familiar enough with some of the references in your collection to know if any are honey gold.
But if you don’t already own a honey gold reference, I highly recommend considering one. The slightly pale gold metal is so uniquely Lange. And btw, huge congrats on a stellar collection! Here are my three. The Langematik Anniversary is definitely my favo...
The upper left is the 1815 HG, 200th anniversary from 2015, my first Lange.
I do love that HG Moonphase but train left. The Anniversary is very challenging to find a good condition sample and the ask is also very high. You’re thinking of the 1815 boutique chrono? May I know why?
So you’re set in terms of honey gold.👍 And you’ve got that awesome moonphase, which was the precursor to the HG moonphase. I suppose one of the perpetual calendars you mentioned would be a likely candidate. Maybe consider a Pour le Mérite?
To answer your question: I’ve been lightening up on chronographs and gravitating towards simpler dials and thinner cases.

I know…but these weren’t available to me and the lucky 50 seems to hold on to them well.

Yes, a Langematik PC is most likely choice. ZW DS is the HG version and sold out.

You're certainly famous and influential here! A friend (who may be reading this now) ordered a platinum 1815 RPC many months ago and is hoping to get it soon. Hopefully he'll post his thoughts on it here when that happens. I wonder if both the Anniversary...

Ah…ok. I always prefer a little twist to a standard model, hence I bought the L1 moonphase.
The earlier Lange 1 are now getting a lot of attentions, maybe only 101.022 is still reachable but Darth, Stealth’s train left.

Lange 1 QP would fill out the middle Lange 1 row nicely and add the perpetual calendar complication. Or tourbillon L1 QP! OG dato platinum or of course the Dato perpetual tourbillon. Even the OG zeitwerk in white gold would be nice.
