Definitely steel for both these watches
The Signature One and Remontoire are watches filled with technology and they both have amazing movements. For both these watches, the choice of metal becomes less significant than say a dress watch. The Signature One in Steel was limited to 33 pieces (I think!) and the steel Remontoire limited to 25 pieces. This adds desirability to the steel models of these watches as the Remontoire is limited to 188 pieces in total making the steel even more sought after

but I would have thought the 25 Remontoires would have been sold in a few months as they are a relative bargain I guess the stigma of buying from an independent will always exist.
The 11 blue dial signature ones for the US market are sold out.
The remaining 22 (with different dials) have to be ordered directly from GF. I would be surprised if those are also all gone.
Fully agreed with you on steel for all the reasons mentioned...

In general I prefer steel and platinum. Both are "pure".

Sports must be steel or titanium or other lightweight scratch resistant metal. Also some oldies formal watches in steel are to die for, look at the Patek amagnetik 3417 for example... For the rest, I personally prefer the importance, heft and shine offere...
